
Vegetarian Stir-Fry with Diva Rice
A colorful, nutrient-rich vegetable stir-fry served over fluffy Diva Rice. Quick, easy, and packed with flavor!
Ingredients
- 1.5 cups Diva Rice (Uncooked)
- 2 cups Broccoli florets
- 2 whole Bell peppers (Mixed colors, sliced)
- 2 whole Carrots (Julienned)
- 1 cup Snap peas
- 3 tbsp Soy sauce (Low sodium)
- 2 tbsp Sesame oil
- 2 tbsp Ginger (Fresh, grated)
- 3 cloves Garlic (Minced)

Cook the rice
Prepare Diva Rice according to package directions. Set aside and keep warm.

Prepare the vegetables
Cut all vegetables into uniform pieces for even cooking. This ensures everything cooks at the same rate.

Stir-fry the vegetables
Heat sesame oil in a large wok or skillet over high heat. Add garlic and ginger, stir for 30 seconds. Add harder vegetables (broccoli, carrots) first, cook 3 minutes. Add softer vegetables (peppers, snap peas), cook 2 more minutes.
