
Healthy Rice Bowl with Grilled Chicken
A nutrient-packed bowl featuring Diva Rice, grilled chicken breast, fresh vegetables, and a tangy tahini dressing. Perfect for meal prep!
Ingredients
- 1.5 cups Diva Rice (Uncooked)
- 1 lb Chicken breast (Boneless, skinless)
- 2 cups Cherry tomatoes (Halved)
- 1 whole Cucumber (Diced)
- 0.5 whole Red onion (Thinly sliced)
- 0.25 cup Tahini
- 3 tbsp Lemon juice (Fresh)
- 2 tbsp Olive oil

Cook the Diva Rice
Rinse Diva Rice and cook according to package directions (1:2 rice to water ratio). Simmer for 15-18 minutes until tender.

Tip: Diva Rice cooks faster than brown rice but has more fiber!

Grill the chicken
Season chicken breast with salt, pepper, and olive oil. Grill for 6-7 minutes per side until internal temperature reaches 165°F. Let rest 5 minutes, then slice.

Prepare the tahini dressing
Whisk together tahini, lemon juice, 2 tbsp water, minced garlic, salt, and pepper until smooth. Add more water if needed to reach desired consistency.

Assemble the bowls
Divide rice among 4 bowls. Top with sliced chicken, cherry tomatoes, cucumber, and red onion. Drizzle with tahini dressing and garnish with fresh herbs.
